-Metal Gear Solid 3 : Snake Eater (Cynthya Harrel singing the main theme, one of the best voices I've ever heard)
-Chrono Trigger (I don't care if they're Midi's, the CT soundtrack is one of the best I've ever heard)

-Guilty Gear (Daisuke Ishiwatari and Koh-Ichi S are geniuses of rock)

O_o Actually, the consider the best NES soundtrack to be Mother's... Capcom's soundtracks are just archtypal "video game music" but Mother did some interesting stuff with that cheap sound processor...
