As for the games on your list...
Ace Combat 5 - Haven't played it, and I don't know that much about it. I suppose if you are a big fan of the series it might be a good buy (although there are other games that I would recommend more).
Star Wars: Battlefront - I own this, and it is an excellent game. I don't play it online, and it is still fun. You can also play 2-player split screen, so there is still a multiplayer option available if you can't play online. The game does a good job of recreating battles in the Star Wars universe, both from the prequels and the original trilogy.
Killzone - Every review I have heard says that the game is a disappointment, so I am inclined to agree with them. You are probably right to skip this one.

If you are looking for a good racing game, then I would suggest Burnout 3: Takedown. It is fast-paced (moreso than any racing game I have ever played), challenging, and there is a ton of stuff to unlock. Not only is there a ton of stuff to unlock, but you unlock things pretty regularly, so the game can get addictive fairly quickly. Burnout 3 is also not just a racing game. There are multiple modes, each with unique objectives. In Road Rage mode the object is to crash your opponents as many times as you can. In Face Off, you have to race against another car in order to win it at the end of the race. However, my favorite one by far is Crash mode. The object of Crash mode is to cause the greatest dollar amount of damage, i.e. by driving your car into a busy intersection, highway, etc. This mode is especially fun, because you can unlock all kinds of crazy vehicles like Fire Trucks, Buses, and UPS-style delivery trucks. On top of that, you can take it online if you ever get a network adaptor.
If you are looking for something with a little more realism, Gran Turismo 4 comes out this month

In terms of fighting games, you can't go wrong with Tekken 4/TT, Soul Calibur 2, Virtua Fighter 4, or Capcom vs. Snk 2 (if you are a fan of classic 2d fighters).
Edit- (Correction) Unfortunately Gran Turismo 4 has been pushed back to December, but that is still only a month away.
