I really don't want this to become a theological debate, even if it is only one sided on these forums, so if we could all avoid anything too serious...

Advice would help too, if you have it. Problem: They don't believe the Bible is God's Word and argue about all the other texts out there. ~_~
Are these people Christian? Their own religious views entirely changes what can be considered a given and hence how you should argue.
If they are non-Christian, I would strongly suggest reading The Case for Christ (Lee Strobal) which covers the factual evidence quite effectively. Also, research the council in which it was decided exactly what books should or should not be canon. The people creating it had some good methods.
If they are Christian, you have a great deal more you can argue from. Foremost, you could point out that their position assumes that God would have nothing to do with making sure His book got created correctly. Unless they want to deny that He has influence in our world, they'll dig themselves into a hole.
