The reason why there's no sense of urgency after two years is because the situation's been normalized. Even if you're trapped in a death game, you can't be on edge all the time after weeks or months. Well, you could, but it's counter-productive in terms of mental health. Everyone accepts that there's no easy way to get out of the situation and frenetically rushing things is known to get you killed. At some point, you just have to do the best that you can and roll with it.
The reason why there's a two year gap is because of the way the novels were written beforehand. There's no particularly good reason for it other than publishing circumstances. However, the author is going back and rewriting the first part to fill in that gap in the SAO Progressive novels.
As to whether or not to finish the entire thing, I think people are being babies about the second part. It's not as good or tight as the first part, but if it turns out to be incredibly unenjoyable for you, then whatever, there's no reason to get mad at anime.
