Please forgive my ignorance, but what do AMV and OVA and these other terms mean? I've watched quite a few anime shows, but overall I'm pretty new to everything having to do with the subject. Are there other terms that I should be aware of also?

What other terms are you looking at? The first couple are actually pretty easy. AMV stands for Animated (or Anime) Music Video. These are fan projects where people will take footage from their favorite anime and cut them to time with songs, effectively making their own themed music videos.
OVAs are sort of like our Direct to Video works. OVAs are short series or stand alones that don't belong to part of the regular series. Often these will be a side arc meant to appease the fans of a series, or they'll be a micro take on the series as a whole. A lot of popular Anime started as an OVA and eventually got their own TV shows. Record of Lodoss War comes to mind. Sometimes, (especially in the case of the one I just mentioned) since they're shorter works, they'll have better budgets too, and the quality will really show.

Well, AMV's are Anime Music Videos which are often shown at Anime Conventions. Basically people take clips from an anime and then take a song that goes well with the anime, and then after much editing, it can be a wonderful thing to watch. These AMVs are often done by the fans themselves.
I maybe could say what OVAs are, but I'm sure there is someone else who would be better apped to describing them.
EDIT: Agh, beaten again. Oh well...

They're also sometimes called OAV's.
A new thing is ONA, Original Net Animation. Some shows, like Eve no Jikan, are released on their official websites first as streaming video before making to TV and/or movie theaters.
