In which browser? In Safari it's more stable.
For Firefox or Camino, there's a Java runtime plugin that helps:
http://sourceforge.net/projects/javaplugin/
This dramatically improves compatibility, although read the install directions carefully because some patching has to be done manually and if you don't do it all, it won't work.

i havent tried firefox or camino or any other... safari it did work... but very buggy and stuff, like when i would view another page and comeback, it would reload the applet and such

That's what it's supposed to do -- any applet will get reloaded when you revisit the page; that's how Java applets are traditionally managed. Open another window instead.
And it's not supposed to be the *earliest* timestamp, it's supposed to be the latest. Make sure you restart Firefox afterwards. The Embedded Plugin makes no difference for Safari.
I'm using Embedded Plugin with Camino 0.9a1, on 10.2.8, and no problems with the chat of any significance.

I'm on 10.3.9 using the out-of-the-box JRE. Do you have apple's latest security patches installed?

If you're still using Safari, that's why. Safari doesn't like its plugins being changed under its nose. The plugin is for use with Camino or Firefox.
