When I say that, I mean are they the same story.
I say this because I can't find Volume 5 and 6 of R.Kenshin anywhere but I just purchased the box set of the first season, and I want to know if I can watch that and jump into Volume 7.

I think you'd probably be all right with starting on vol. 7 of the manga after finishing the first season of the anime. The first 6 volumes of the manga do have a few differences from the anime, but the overall story is the same, so I don't think it's anything that will keep you from understanding the Kyoto story arc that comes after. The Kyoto story arc is also quite similar in both the anime and the manga, with only a few minor differences if I'm remembering correctly. The third, and final, season of the anime, however, is completely different from the final story arc of the manga.

Yes and no. There's extra filler in the first arc that won't be found in the manga, but the second arc, the Kyoto Arc, is incredibly similar to the manga. The third arc, however, is all filler in the anime, but in the manga, it's the amazing Jinchuu/Revenge Arc (which I highly reccommend for reading
).
Also, jumping from volume 5 to volume 7 won't hurt you at all. There's a small mention of some of the events in 6, but it's really nothing too important to the remainder of the story (speaking of the Raijuuta events, of course). And personally, 5 and 6 are my two least favorite from the series, so you won't be missing anything mind-blowingly awesome. XD

Likewise with One Piece which is almost (or is it past?) 300... :/ Long series annoy me so trust me 95 isn't THAT bad... At least it ended one way or anything :/ I'm still watching through the Christian arc of the anime... You can SO tell that even in that the beliefs are a little :/ But yeah the final manga arc is totally different... the only place you can see it in anime is on the Reflections DVD that paraphrased er-paranimated the final battle and stuff.

The manga of One Piece is 416 chapters and the anime is in the mid to late 200s.

Manga-wise it actually NEEDS that much (some of the anime is filler).
But yeah, 95 is nothing compared to other series, though it seems with 24 Volumes Kenshin would be fairly long either way.
