what to use to record?

Hey All!
I have a song I wanna post, but I don't know what software to use to record it. It's a single vocal part (me) and my acustic guitar. I have access to Win/Mac/Linux hardware all with sound cards, but I don't know where to go for cheap (read: free) software to do the recording and/or editing. I really can't get a good recording with SoundRecorder, and I didn't like the stuff I found through google for the Mac. Also, does anyone know what kind of cheap (I guess I can't get this for free) microphone system to use? I have a couple of old Mac Microphones (the area ones...) but I don't think they are all that great. I know some of you out there have to have done this before, so...

Any ideas?

Are you using OS 9 or OS X for this? If you're using OS 9, SoundEffects works very well (plus OS 9 has lower sound latency than OS X CoreAudio, and no chance for tasking to steal your recorder task's CPU away).

I use Audacity that you can d/l off of sourceforge.net . I have a whole mess of VST plugins that you can use.
