It's hard to say; I like a lot of the ones out there that actually speak of our Lord's birth, but I think my very favorite ones are those set to a minor key (for example):

O Come, O Come Emmanuel
God Rest Ye Merry, Gentlemen
We Three Kings

I'm sure I'll think of more later. ^_^

I can't believe I forgot about Carol of the Bells. That must be one of my all-time favorites. :D Also, Winter Carol is good, too.

I love many of the Christmas carols, especially the Olde English ones, but if I had to narrow it down to just two, I would choose:

O Come, All Ye Faithful

and

Come, Thou Long-Expected Jesus
